What is Gas Mark and where is it used? +
Gas Mark is a temperature scale found on gas ovens, primarily in the UK and some Commonwealth countries. Gas Mark 1 equals about 275F (140C), and each increment adds roughly 25F (14C). It ranges from 1/4 to 10 in common cooking use.
What temperature is "moderate oven" in Fahrenheit and Celsius? +
A moderate oven is generally 350F (180C), which is Gas Mark 4. This is the most common baking temperature for cakes, cookies, and casseroles. Recipes from different countries may use different terms, but moderate always means this range.
Why do recipes from the UK use different temperatures? +
UK recipes typically use Celsius or Gas Mark, while US recipes use Fahrenheit. A UK recipe calling for 200C is the same as a US recipe calling for 400F. Fan-assisted (convection) ovens in the UK also run about 20C (35F) lower than conventional equivalents.
